Ronan Ryan trained to become a chef at the R.T.C. Galway and proceeded to gain experience in London, Sardinia and New York before returning to Dublin in 1997 where he commenced working as Sous Chef, and subsequently Maitre D\' at Il Primo before moving to Mermaid Café.
